Herndon Career Center Culinary Team earns first in state competition

The Herndon Career Center ProStart Culinary Team earned first place at the Missouri ProStart Invitational Culinary Competition. The team defeated 22 teams from around the state and qualified for the national competition, April 28-30 in Charleston, South Carolina. 

Students on the team included Team Captain Kaitlyn Barkley from Raytown South High School, Melissa Dodd from Raytown High School, Robert Liggett from Raytown High School, Micah Talbert from Lee's Summit West High School, and Hanna McMickell from Lee's Summit High School. 

For the competition, students created a KC Pride Menu which incorporated ingredients found locally into their recipes. The menu included a starter of a salad with local, assorted vegetables with misted orange vinaigrette garnished with balsamic reduction, carbonated grapes, herb-citrus goat cheese, and an olive oil powder; an entrée of eye of rib eye glazed with KC Barbeque sauce, sweet potato puree, sautéed green beans with bacon, and a traditional mid-western coleslaw. Dessert featured raspberry mouse with a coffee gelee, cinnamon chocolate steam cake, macerated raspberries, chocolate ganache, whipped cream, and cinnamon tuile. 

In order to prepare for the competition, students had to practice after school. Culinary Arts Instructor Theresa Marler said, “This team had to dedicate their lives to this goal.  I am so proud of their dedication and problem-solving skills.”
